For some people the best thing about summer is the chance to eat and drink outdoors. Whether you’re a foodie or you like a tipple, nothing compliments the warm weather like a refreshing drink. But many of us are choosing to forgo alcohol and this has led to a rise in the mocktail.

One of the fun things about mocktails is that all the family can enjoy them. So if you fancy trying your hand at mixology we have put together a list of six refreshing summer mocktail recipe ideas that the whole family will love, and are easy to make.

Watermelon Lemonade

Ingredients:

  • I x large watermelon
  • 250ml freshly squeezed lemon juice
  • 100g castor sugar
  • 1l x bottle soda water
  • Slices of lime
  • Sprigs of mint
  • Crushed ice

Method:

  1. Slice the top from the watermelon and scoop out the flesh, removing the black pips.
  2. Push the flesh through a sieve then whizz in a blender with the lemon juice and sugar.
  3. Add the soda water and use the hollowed out watermelon to serve with the lime slices, mint and crushed ice.

Strawberry Orange Ginger Fizz

Ingredients:

  • 8oz strawberries, hulled and quartered
  • 3 inches of fresh ginger, peeled and sliced
  • 3 x 3-inch strips of orange peel, removed with a vegetable peeler
  • 80ml cup honey
  • 60ml fresh-squeezed orange juice
  • 60ml cup water
  • Pinch of sea salt

Method:

  1. Place all the ingredients in a pan and bring to the boil slowly on a medium heat.
  2. Cook for around 5 minutes until the surrounding liquid turns pink and the fruit is soft.
  3. Cool for five minutes, then strain through a sieve pushing the fruit to extract all the liquid. Leave to cool to room temperature.
  4. This is your mocktail syrup and you can keep it for up to a week in the fridge.
  5. To make each drink, put a couple of heaped tablespoons of syrup in the bottom of a tall glass and top up with sparkling water.
  6. Garnish with orange slices and strawberries.

Coconut, Cucumber, Lime, and Mint Cooler

Ingredients:

950ml coconut water
2 cucumbers sliced very thinly
120ml lime juice
3 tbsp. sugar
3 tbsp. chopped mint leaves

Method:

  1. Mix all the ingredients together.
  2. Chill for a couple of hours then serve with mint sprigs and crushed ice.

Roasted Peach and Strawberry Fizz

Ingredients:

  • 3 x peaches
  • 600g strawberries
  • 350ml apple juice
  • 350ml sparkling water

Method:

  1. Preheat the oven to 175°C.
  2. Cut the peaches in half, removing the stones.
  3. Cut the strawberries in half and place all the fruit on a lined baking tray.
  4. Cook for 25 minutes then remove and leave to cool.
  5. Take the skins off the peaches then whizz them with the apple juice until smooth.
  6. Blend the strawberries separately and put to one side.
  7. To make the mocktails, divide the strawberry puree into glasses and top with the peach and apple juice mixture. Add sparkling water and garnish with fresh strawberries.

Frosted Lemonade

Ingredients:

  • 120ml freshly squeezed lemon juice
  • 6 tbsp. sugar
  • 480ml water
  • 1.4litres vanilla ice cream
  • Sliced lemons, for garnish

Method:

  1. Mix lemon juice and sugar together until the sugar is fully dissolved. Add the water and leave to chill. This is your lemonade.
  2. Put the lemonade and ice cream in a blender and whizz until frothy. Pour into tall glasses and garnish with lemon to serve.

Peach Iced Tea

Ingredients:

  • 5 x ripe peaches
  • 200g granulated sugar
  • 4 x teabags

Method:

  1. Stone and slice the peaches (leave the skin on).
  2. Put the sugar in a pan with 250ml water and slowly bring to the boil to dissolve the sugar.
  3. Add the sliced peaches and cook until very soft. Take off the heat and mash the peaches with a fork. Leave for an hour.
  4. Sieve the peach mixture really mashing the fruit to release all the liquid and flavour. You now have a peach syrup that will keep for a week in the fridge.
  5. To make the peach tea, pour 2 litres of boiling water over the teabags and leave to infuse for a few minutes.
  6. Leave to cool, then, when you want to make the mocktail, stir in the peach syrup and add a little ice to serve.
